– - 2 cups Bisquick mix – - 1 cup milk – - 2 eggs – - 2 tablespoons sugar (optional) – - 1 teaspoon vanilla extract (optional) – - Butter or oil for cooking

Heat a non-stick skillet or griddle over medium heat.

In a mixing bowl, combine Bisquick mix, milk, eggs, sugar (if using), and vanilla extract (if using). Mix until smooth.

Once the skillet is hot, add a small amount of butter or oil to coat the surface.

Pour about 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.

Flip the pancake and cook for an additional 1-2 minutes, or until golden brown on both sides.
